What is Blood Sorrel (Rumex sanguineus)?

Blood Sorrel, also known as Dragon's Blood or Sorrel, is a perennial plant native to Europe. The name refers to the contrasting leaves with bright red veins, which make the plant instantly recognisable. Blood sorrel belongs to the knotweed family (Polygonaceae) and is related to sorrel, rhubarb and buckwheat. Its ornamental value makes this plant popular in natural gardens, while its edibility makes it popular in the kitchen.

Properties of the plant

Blood Sorrel has an upright habit and reaches a height of between 30 and 70 cm. The fresh leaves with deep red veins add a special colour accent to the pond edge. Flowering usually takes place in June and July, but the flowers are small and inconspicuous. The leaves are not evergreen, but the root survives frost effortlessly.

Ecological value & edibility

Although Blood Sorrel attracts few insects, it is a valuable plant for humans. The young leaves are rich in vitamins C, A, B11 and iron. The taste is mildly acidic, similar to Blood Sorrel, but softer. Especially young leaves are used in salads, herb butter or pesto. Older leaves are firmer and more suitable for stewing or stir-frying.

Note: blood sorrel contains oxalic acid. Eat in moderation if you have sensitive kidneys or bile problems.

Blood sorrel prefers to grow in sun to semi-shade. It does well in the marsh zone with a water layer of up to 5 cm, but also tolerates brief droughts. Thanks to its wide tolerance, it can be planted both in a pond basket and loose in moist soil.

Plant preferably in spring or early summer to allow the plant to root well before winter. Use airy soil or pond substrate and keep the soil moist while rooting in.
